Ground Turkey Muffins

Ingredients

  • 1 package of ground turkey breast
  • 3 cups chopped spinach
  • ¾ cup chopped onion
  • 4 egg whites (or ½ cup liquid egg whites)
  • ¼ cup ground flax seed meal
  • 3 tablespoons spicy mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees and lightly spray a 12 count muffin pan with coconut oil cooking spray.
  2. Mix together all ingredients in large bowl—I use my hands, but use whatever method works best for you.
  3. Fill each muffin cup with ground turkey mixture and bake for 40-45 minute.
  4. Allow to cool before removing from pan.

    I made the turkey muffins this week, they were good. I’m not a huge mustard person so I didn’t add as much as the recipe called for. I think I should have though as they were a bit bland. I’d make them again, quick and easy!

    1. So awesome! I also love how convenient they are. Maybe try something like lemon juice, a seasoning, or hot sauce if you like spicy 🙂 instead of the mustard next time!
